This Mini Layered Cake is actually a Mug Cake made Sugar-Free, Gluten Free, Grain Free and Low Carb. It’s layered with Sugar-Free Maple Cream frosting in between perfect pumpkin spice cake!

Pumpkin spice cake that is made in minutes and tastes like everything of fall you enjoy, is divine all by itself. But including some Sugar-Free Maple Cream Frosting in between those layers of completely moist pumpkin cake is even much better!

I do not know who it was who dreamed up the idea for mug cakes made in minutes in the microwave, however whoever it was, I am forever grateful!

This previous year I have actually coordinated with Horizon Organic to supply recipes that assist families enjoy foods with less sugar.

I don’t have a whole lot of time on my hands to make lovely traditional cakes, I just make conventional, large portion cakes for birthdays and vacations and that is it.

One of the greatest factors is I have a problem with portion control. Once it’s there resting on the counter or in the fridge I can not appear to control myself with desserts. Thus the mug cake made for individuals like me.

I think the original mug cake idea was probably made for simply one single serving. And I have a lot of them on my blog because that’s how I roll.

Make it. Consume it. Forget about it. No more returning for seconds since there isn’t any. That works for me.

But it’s also a good idea for my whole household. My children have got that craving for sweets like their mum. They require portion control similar to I do. In comes my concept for mug cakes made for more than one. More like 2-4 depending upon your portion control issues.

Make 2 best little mug cakes. Make frosting. Layer simply like you would for a routine big cake. The very first time I attempted this idea was for my spouse. It was a Red Velvet Valentine’s Couple’s Mug Cake and it was exactly what has gotten me to love the entire layering mug cake concept.

While it’s still a tasty cake, it’s mini!

Slice into 4 sections. I get a piece and each of my 3 kids get a piece.

Afternoon time as soon as school is done, this is the ideal little treat. No sugar, not a whole lot of calories so it won’t ruin their dinner and it’s made in minutes. Absolutely nothing sweeter to a mama like me then some additional time on my hands instead of slaving in the cooking area making cake!


2 eggs
1/4 cup Horizon Half & Halfor Horizon milk
1/3 cup pure pumpkin puree (not pie filling)
1/4 cup coconut flour
1/3 cup Swerve sweetener
1/4 tsp baking powder
1/2 tsp pumpkin pie spice or use 1/4 tsp cinnamon, 1/4 tsp cloves
pinch salt

Maple Cream Frosting

4 ounces softened cream cheese
1/2 tsp maple extract
1/2 tsp cinnamonliquid stevia
1/2 tsp pumpkin spice
2 tbsp Horizon Heavy Whipping Cream


– Whisk first 3 active ingredients together until integrated.
– Stir in staying ingredients.
– Grease 2 ramekins. I used quiche ramekins, more shallow.
– Divided batter amongst 2 serving meals.
– Microwave one cake at a time 1- 2 minutes or till toothpick in center comes out tidy.
– Permit to cool entirely prior to frosting.

* Not into microwave or do not have one? Bake these in a preheated oven at 350 degrees for 15 minutes.

Net Carbs: 5.5 g.
